Ahara Rasa, Small Business, Big Values

Author: Rianne Chittenden

Ahara Rasa (Ah-huh-ruh Ruh-suh) means “the essence of food” in Sanskrit. It speaks to the subtle energies we extract from food, rather than the mass itself, which is discarded. Ghee exemplifies the Ahara Rasa, being the most subtle and complete distillation of the cow’s life-giving milk.

Our background in East Indian medicine (Ayurveda) informs all aspects of Ahara Ghee. Ayurvedic texts state all things in our universe are made up of the five elements: Ether, Air, Fire, Water and Earth.

These elements are constantly at play all around us, rising and falling with the time of day, seasons and every choice we make. The science of Ayurveda is rooted in bringing balance to the elements. True health is found when the elements are in harmony. We are very mindful of every working piece from beginning to end, in order to bring you a deeply nourishing, healing product.

Another reason we love Ghee is for its “prabhav” or special property to either tonify (build tissues) or purify (cleanse tissues) the body depending on the amount of ghee and the context in which it is consumed.

We, at Ahara Rasa, make more than just "clarified butter". According to Ayurvedic principle, to be true GHEE, it must be cultured to get the health benefits of improved digestion and increased mental wellness, among others. We carefully source our butter from farms with the highest animal welfare status and are the only cultured ghee company to be Animal Welfare Certified® and Truly Grassfed®.

Ahara Ghee is committed to the traditional process outlined in the Charak Samhita (one of the main ancient texts of Ayurvedic Medicine, used for thousands of years and still relevant today). Once the cultured butter is in our hands, we flame cook versus using a big stainless dairy vat; Although trickier, we go this route because of taste.

The meticulous filtration process removes all detectable lactose and casein, making it a stable, pure butter fat that does not need refrigeration. If you have a TRUE ALLERGY to milk products, however, you may be sensitive to nano traces and therefore should avoid any milk-derived products. For those who simply have an intolerance, we are here to butter you up!

Ghee can be used ANYWHERE you would use butter or cooking oil! Think of it as more than an oil substitute though. Ghee is medicine and an investment in your health. We have 7 flavors, some sweet, some savory and all incredibly versatile.

We are confident that these fastidious rules by which we create our ghee make for a better tasting, healthier and more medicinally viable ghee that will nourish every cell in your body. We wanted a product we can trust and are proud to feed our own families. We are grateful you choose us to help feed your family. Thank you for supporting small business and artisanal food!
