Niter Kibbeh Ethiopian-style Collard Greens

Made with Ahara Niter Kibbeh Ghee. 

In a heavy bottomed saucepan or cast iron skillet, add 1 tablespoon of Niter Kibbeh Ghee and warm over medium heat. Mince one red chili (optional) Add 1 chopped yellow onion to the pan and caramelize. Toss in roughly chopped collard greens and cook for 5-10 minutes. Season with salt and pepper to taste and enjoy!

It is high in iron and magnesium, nourishing the blood and the muscles. The apple is great for thinning the bile and cleansing the liver. This oatmeal with oomph leaves you feeling full and nourished but not weighed down. This is my breakfast most days in the Springtime and I love it!
